Lesson No. 1: A Chardonnay is not just a Chardonnay. There are almost infinite variations and life is short. When Tomas Hynek talks about wine, his eyes light up and you immediately see: he loves and lives wine – hobby is profession and vice versa.
The first wine he ever had? A Pinot Gris. His favorite wine? There is no such thing! Because limiting himself to one is not Tomas Hynek’s style. He wants to spend his whole life tasting new wines. “Wine doesn’t always have to go with the food,” he explains. “I look at the situation, the occasion, the mood of the guests, and then I recommend the appropriate wine.” For example, a sparkling champagne for a first date and a strong „Sturm“ (strong young wine) to listen to ACDC. But in the end, for him the guest’s taste always comes first. “There’s no situation where wine doesn’t fit…except for driving.”
